- 2 tbsp avocado oil
- 1 cup chopped onion
- 3 bay leaves
- 1/2 tsp sea salt
- 1 tsp black pepper
- 2 tsp garlic powder
- 1/2 tsp ground coriander
- 3-4 chopped carrots
- 1 chopped parsnip
- 1 32 oz carton vegetable broth
- 2 cups water
- 2/3 cup quinoa
- 1 14 oz can diced tomatoes, or fresh chopped tomatoes
Steps:
- Place oil in a large stockpot and heat over medium heat, and add onion
- Add all remaining ingredients and bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally
- Serve hot
